Pan Fried Tilapia

Not the actual finished product but will be equally yummy
Hello everyone! Here is this weeks budget friendly recipe. Since I cook for a family of 2 and 1/4 each recipe is for 2 servings. Double the recipe for 4 servings. 


Ingredients:
1/4 cup oil (I use olive oil)
4 tilapia fillets (thawed & patted dry)
1/4 cup flour
1 egg (beaten)
1-1/2 cups panko bread crumbs
 
Directions:
  1. Make three bowls - one with the flour, one with the beaten egg and a little water to thin it, and the last with panko. (It is best to line these up in order)
  2. Warm the oil over medium heat to in a non-stick skillet
  3. Dip the fish into each bowl and carefully place directly into the heated pan. (I normally cook 2-3 at a time to prevent overcrowding.)
  4. When you see the fish turn golden at the bottom flip it over carefully. 
  5. Continue to cook the other side for another few minutes. 
  6. Have a plate lined with paper towels ready and move the fish onto it.
  7. Cover and place in oven or microwave to stay warm. (turned off)
  8. Repeat for second batch.

Season as desired and serve with brown rice. 

Note: You can also use this recipe for pan fried scallops.
