Weekly Recipe: Easy Shrimp Scampi Pasta

by - Wednesday, September 29, 2010

Hello everyone! This weeks recipe is "semi-homemade" making it very easy to create at home. Normally pastas like these cost over $10 per plate at big restaurants. This one is about $10 total for 4 servings.I made this because small frozen shrimp cocktail platters were on sale at my store for $1.99 each! Then I found scampi sauce nearby for less than $3. Add in some pasta and we have a meal!

Ingredients:
Spaghetti noodles
2 lbs shrimp (whatever is on sale. I used medium sized)
scampi sauce
  1. Boil the noodles. I broke mine in half to make it easier to pick up with the shrimp.
  2. Cook the shrimp (if necessary)
  3. Heat 2/3 cup scampi sauce and the cooked shrimp in a saucepan or skillet over low to medium heat.
  4. Drain the cooked pasta and add to scampi mixture.
  5. Toss and remove from heat.
  6. Drizzle more scampi sauce if needed.
  7. Salt, pepper and Parmesan to taste
