Easy Pepper Steak with Rice

My Easy Pepper Steak
Here is another of my recipes that uses a "boxed" item as the main ingredient. This one uses the precooked refrigerated roast beef tips that can be found by the meat section. My store often has them for around $6 plus there have been a few $1.50 off coupons in the newspaper lately. I also use the  12 oz frozen pre-cut frozen peppers which are normally 3 for $5 at our store (We use peppers and onions a lot and lack the transportation to get fresh ones on a regular basis.) I keep rice in the pantry so this recipe runs under $10 for 4 servings which is less than what most similar frozen entrees cost and tastes better too!

Ingredients:
Refrigerated Precooked Beef Tips (with Au Jus or Gravy)
2 cups bell peppers sliced into strips
1 cup onion sliced into strips
Rice (equivalent of 4 cups cooked)
1/8th cup Worcestershire sauce
  1. Boil the rice according to directions. Set aside when finished.
  2. Prepare the beef tips in the microwave as directed. Let stand as directed.
  3. Heat a saute pan with oil and brown the peppers and onions. (If using frozen veggies you will have to cook them a little longer to remove the extra moisture, firming them back up.)
  4. Add a couple dashes of Worcestershire sauce to the pepper/onion and season with a little salt.
  5. Remove from heat and set aside.
  6. Remove the beef tips from the dish and break up the meat (if necessary)
  7. Add the 1/8th cup Worcestershire to the au jus or gravy and mix well.
  8. Add in the meat and pepper/onion mix and combine.
  9. Serve over rice.
IF you haven't noticed, we eat most of our dinners on paper plates. With a young college student as a husband, regular plates can't keep up with him, so we just eat on these lol
