New Year, Simple Changes

This new year has brought many changes for my family already. A few days into the year, we have had a new addition in our immediate family and I have begun changes to help make my family's lives healither. I have begun a healthier lifestyle campaign for me, my husband, and our daughter. 

Changes begin with one person, and as the mother, wife, primary shopper and chef of the Stephens residence, I have made it my priority to make sure that we are eating healthier, even if it is just a little bit healthier than last year. You have to start somewhere!

Breakfasts - I am not a morning person and as a result, often skip breakfast. That is not a good practice for myself, nor a good example for my young daughter. Since the new year began I have been making the extra effort to eat and drink something nutritious for breakfast. I have invested in some oatmeal, breakfast drinks fortitfied with vitamins, fiber cereals and 100% juice. My daughter will often want to try what I am having so this is a great way to introduce healthy food choices to her.

Lunch - I am a fast food type of person during lunch. If I can not make it to the fast food restuatant, the next best thing is a frozen meal, ost of which as we know are very unhealthy. All of those days are out the door and have been replaced with tuna and healthy salad options. This gets a little tricky with my husband and daughter since he is gone during the day and she is very picky. When he is home I will make tuna for him as well, but the little one is still a little on the fence. It is a work in progress.

Dinner - As a southern family, we love anything that is buttered, smothered or fried all of which can be terribly unhealthy. I was happy to find a grill pan on sale today and purchased it in order to cut back of the need to fry. Grilled can be equally flavorful while being super healthy. I have also began to make sure I cover most of the food groups in our dinners. It used to just be a meat and veggie OR starch, which worked for us when we were in college (and could eat just about anything) but now we need to be at the top of our health. I am currently on the look out for more nutritious ways to cook our favorite meals!

I have also been working out, which my daughter tries to imitate sometimes. I love the feeling of being a good example for her. What simple change have you made in your life this year?

Before we were married, we were college students without a care in the world. Valentines Day just seemed like any other day. We were in the puppy love stages. Head over heels in love and always buying presents for each other. It was just a day with a themed present. I was always writing him love notes, sneaking them in his wallet and other places I knew he would find them. 

Now that we are married with a child, our lives are completely different. My husband's classes keeps him busy most of the day, while my day is preoccupied caring for our young daughter. We don't get to spend much time alone together or have deep conversations like we used to but our feelings for each other have not changed. We just don't have the time to write letters anymore or spend hours searching for a special gift for each other. Life has more responsibility. Thrifty Tip: In the Kitchen...

One of the best investments I have made in the kitchen is parsley. Yes, I did just say parsley!

We all know that it is much more cost effective to cook homemade meals from scratch rahter than frozen or restaurant dinners. The only thing is, our homemade meals may not look as appealing. My favorite thing to fancy up a meal is a little sprinkling of dried parsley right before serving. You would be amazed at the difference in appaerance that this little herb makes and at less than $4 for a LARGE bottle it is worth it! Most meals will only need one teaspoon to one tablespoon either sprinkled on top or mixed in (such as rice.)

If you are really adventurous consider growing your own parsley and other herbs to dress up your meals!

Book Review: God Loves Me More Than That

Written by Dandi Daley Mackall and beautifully illustrated by David Hohn, "God Loves Me More Than That" is a children's book that seeks to explain God's love in ways that they can understand. Children seem to learn by comparing things they already know. The author takes this idea and creates an adventure that takes the children through all the ways that God loves them. 

The book is s written as a poem with each verse of the poem ending with "God loves me more than that." Based on Ephesians 3:17-19 from the Bible, which describes God's love, each four pages of the book explores a different aspect of God's love. The author accomplishes this by answering the questions:

I first saw this product on several cooking shows and thought how great would it be to own one myself. They primarily used it for frying so I ordered this product for the same use - removing deep fried items from the hot oil. Unlike tongs, the wooden handle prevents heat from reaching my hand while the mesh part helps drain excess oil. This product can also be used for stir-frying in woks, skimming fat, and several other ways. The washing of wood items always has their problems eventually, but in the meantime, I will be using this product often. The price is reasonable enough to replace this product as needed.

I use this product for sauteeing in my non-stick pans as well as stirring in my non-stick pots. Nothing is worse than scratching those pans. The wooden handle prevents heat from reaching my hand while preventing scratches on the non-stick lining of my cookware. The washing of wood items always has their problems eventually, but in the meantime, I will be using this product often. The price is reasonable enough to replace this product as needed.

Side Dish: Easy Seasoned Northern Beans

just no ham or carrots
My husband is a fan of northern beans. I had no experience with them until we got married and I remembered that his mom used to make it, so since then I've been experimenting with different things to make it my own. Here is the most recent version that we fell in love with.

1 can northern beans
1/2 medium onion small diced
1 tbsp dried parsley 
fresh cracked black pepper and salt to taste

  • In a small pot, combine the beans and onion.
  • Heat over medium heat.
  • Bring to boil, then simmer.
  • The liquid in the beans will begin to look creamy.
  • Cook until beans are tender and onion is translucent.
  • Season with salt and pepper.
  • Stir in parsley just prior to serving.

Serving suggestions - This goes really well with any meal that includes cornbread.

Annabelle's Art, Handmade Greeting Cards: Review & Giveaway

I am absolutely in love with anything handmade! There is a touch of something special and meaningful in giving and receiving handmade items. I was very excited to have been selected to review the unique handmade greeting cards from Annabelle's Art.

Annabelle's Art is a mother and daughter team in Quebec, Canada. The mother, Ninon helps her 11 year old daughter, Annabelle, create these wonderful cards. They face many challenges, as Annabelle is a special needs child, but that does not stop Annabelle's love for arts and crafts.

Makeover Mon: Smoothing Facial Mask

1 avocado, peeled and cubed
1/2 cucumber, peeled and chopped 
1 egg white (tip: save the yolk for something else)
1 tsp. milk
  • Blend all ingredients until it has a smooth paste consistency.
  • Apply the mask to your face and neck.
  • Let sit until completely dry (approx. 30 mins.)
  • Rinse thoroughly. 
  • Face and neck will feel smooth and fresh.

Making It - Week #2

So how did we make it? We really had to plan our finances out the best we could. Our main source of money came exclusively from my husband's financial aid, which comes once a semester, or 5 months.  

Let me first explain how financial aid works here in Georgia.

Georgia currently has a wonderful education program called the HOPE Scholarship that pays for its residents first college degree. High school graduates with at least a 3.0 GPA are eligible to have all of their public university tuition paid or $5,000 applied to private universities (as long as they maintain that 3.0 GPA.) The only things this does not cover are books and extra fees. I was lucky enough to have my B.S. degree completely free, due to living at home and my mother's low income, which gave me extra scholarships to cover my books and fees. Now that we're married and living away from home, our living expenses are much higher. So even with the HOPE Scholarship, loans and extra scholarships are necessary to make up the difference.

Book Review: A Year With God by R. P. Nettelhorst


One of many people's resolutions this year is to grow spiritually. A great way to accomplish this is with a devotional. Today I am reviewing "A Year With God" by R. P. Nettlehorst. This devotional focuses on God's own words from the Bible. The author reasons that by reading His words will help us to get closer to Him just as listening to a friend helps us get closer to them. Sounds like good reasoning to me.

The book includes 365 daily readings divided into ten subjects that address both the positive and negative, such as "Hope and Fear" and "Faith and Doubt." The author included a large table of contents based on the subjects to help find individual readings easier. Each reading is one page in length and includes a section of scripture, the Bible version the scripture came from, and an explanation of the scripture. I love that these take no longer than a few minutes to read each day. With this type of reading, it is a great way to begin, end your day, or anytime that you can get a few minutes of reading in. I would definitely recommend this to anyone looking for a way to grow more spiritually mature.

Not So Wordless Wednesday - My New Sibling!

I've been staying with my mom while she prepared to give birth to our newest family member Christopher, who was born on Monday! Yes, I did say my mother LOL.

I was 11 (almost 12) years old when my little brother was born and now that's he's 11, we have another little brother. What timing! I'm very happy for her. After several years of being a single mom to me and my little brother, she remarried a few years ago and little Christopher is the result of our blended family. In total Christopher joins our family of 2 brothers and 3 sisters. Well now there's an even number of both! 

I was reading an article earlier this month that said that women over 40 have only a 5% chance of conceiving naturally, and while my parents didn't expect it, they were blessed enough to fall into that group. She didn't have a complicated pregnancy or delivery like most would have thought. No C-section required. I was blessed enough to be in the room when my brother was born...chunky, adorable little Christopher. They came home today, happy and healthy!

Getting the Most Out of Baking Soda

I'm a huge fan of natural ways to clean things around the house which is why I LOVE baking soda. I previously had written a Thrifty Tip post on it. Well over the weekend I found this really nice article from AllYou.com describing 20 different uses for baking soda! You can read the great uses on the website here. So, for todays tip I want to revisit this great product and how it makes family life more affordable.

On average baking soda costs less than $1 for the name brand. Most uses of the product typically call for a tablespoon at a time making this a handy  and cost effective product to have in your home.

So what are my thoughts about AllYou's surprising uses? I will definitely be trying numbers 2, 4,11, 17, 19 and maybe 20 (for a pedicure in a bind.) What uses will you be trying? Do you have any other surprising use for baking soda?
