Creamy Baked Enchilada's

Condiments — sour cream, grated cheese, ...This is the updated version of this recipe I ade when we had moved to a new city and the store did not carry the enchilada dinner kit. From memory I snatched up some ingredients and made a batch. This updated version uses the new Philadelphia cooking creme instead of seasoning packets. This has become one of our favorite dishes. Serves 4 (about 1 enchilada per person.)

Ingredients:
1 lb cooked shredded chicken
2 cups sliced bell peppers and onions
1/2 tub Santa Fe Philadelphia Cooking Creme
1 14 oz can red enchilada sauce (I like Old El Paso)
medium wheat tortillas
Shredded cheese

Family Spring Break 2011

Spring Break is over for us this year. 

We were able to spend time with our family and friends. My baby brother "C" is now almost 3 months and so much bigger than the last time I saw him...granted, that was 2 days after he was born but wow, babies grow faster than I remember! If I'm not blessed with having a son of my own, I'm more than blessed with him (plus my own daughter of course.)

It was so nice to see my little one interact with "C." I was in church that she is very mothering to others but to actually see it was something else. She would put out her arms when she wanted to hold him,  cover his legs with his blanket, try to put his pacifier in...the list goes on. She'll make a great big sister one day!

We were also able to go to church, which has been really hard for us to do since we moved from home. We met several times with our church family outside of service to help us with some of the problems we have been struggling with. It was a humbling and refreshing experience. At the end of the day, we're a work in progress, as a couple and as individuals and I'm fine with that! Just have to push that pride aside and ask for help sometimes. Now, we're back home and starting to pack for our big move. I will tell you all about it later.

Book Review: "Life, In Spite Of Me" by Kristen Jane Anderson with Tricia Goyer

Life, In Spite of Me: Extraordinary Hope After a Fatal Choice
"Life, In Spite Of Me: Extraordinary Hope After a Fatal Choice" by Kristen Jane Anderson with Tricia Goyer is the amazing story of the author. At only 17 years old, she made a choice that should have ended her life. She has used her story to inspire and encourage others while bringing awareness to the issue of suicide.

Depression is something that is near and dear to my heart. I found comfort in this book learning Kristen's story and how she overcame her obstacles in life. The book begins on the night of her failed suicide attempt, then follows Kristen through her memories that led up to that breaking point, and her struggle to recover. Like may of us, Kristen was raised going to church with our parents but never "formally" accepting Christ into our lives. Kristen shows us how it's never too late to accept the Lord and how He is always there for us, wanting us to accept and love Him. He worked miracles in Kristen's life and wants to do the same for us. 

This is definitely a book that I'm passing on so that others can be blessed by it. This would be great gift for anyone going through hard times, in need of comfort or looking for a great read.

    How I Make Deals Affordable - Side Money

    With all of the small deals out there, how can you keep them from cutting into your family's budget? Well, I've found a few ways to earn small money to fund my online purchases. 
     

    PineCone Research - a company that pays you $3 (check or Paypal) per survey. You recieve payment within a few days after completing each survey. I used to do the check option but found Paypal easier since it doesn't require a trip to the bank. I typically get 2-4 surveys monthly but it will depend on your personal profile how often you are chosen.

    Product Review: Velcro ID Bracelet by My Precious Kid {Re-post}

    Hello everyone! This week I am reviewing the velcro ID Bracelet from My Precious Kid which I purchased myself from their website www.mypreciouskid.com.

    This product is designed to have important information about your child available in case of an emergency. The bracelet comfortably fits both my 1 year old's wrist as well as mine. The bracelet is bright in color with the words "ID INSIDE" that lays across the top of the wrist. Inside of the bracelet is a waterproof label tucked into a pocket. You personally write all of your child's important information and contact numbers inside. The price was very reasonable as well as shipping. For under $10 shipped we got a great deal.

    I was very excited when I saw Philadelphia cooking creme in our grocery store. Needless to say I bought one of every flavor. To change things up from our regular spaghetti, I made this version. Hubby isn't a tomato fan but enjoyed this recipe anyways. Serves 4-6 and takes about 30 mintutes to make. Enjoy!


    8oz linguine
    1lb ground beef
    1 can (14.5 oz or larger) diced tomatoes
    1 can (8 oz) tomato sauce
    salt, pepper to taste
    parsley, Parmesan cheese to garnish
