Happy Valentines Day!

This year, I planned a romantic dinner (via Rachel Ray) for me and my husband. I will admit that I slpurged a little on the meat but being that I already saved and planned ahead last month, it didn't affect our budget at all. Here are the 2 recipes I am using:

Appetizer:
Pan-Seared Scallops with Pesto and Tomato Recipe - Every Day with Rachael Ray. For this recipe, I purchased the tomato, pesto and scallops (which will be used in the entree as well.)

Entree':
 
Seared Scallops and Tenderloin Steaks with Manhattan Sauce Recipe - Every Day with Rachael Ray. For this recipe, I only needed the steaks, EVOO (normally on hand but I was out), shallots, garlic (also normally on hand but out), and asparagus. I will be using chicken stock instead of the vermouth, which I already have on hand from another recipe.

Plus we'll be having baked potatos, honey butter biscuits and chocolate chip cookies for dessert.

For entertainment, I will be making a playlist of our fave songs, as suggested in this awesome tip sheet from Betty Crocker. I also have some of our fave board games out.

For decor, I used some leftover tissue paper from Victoria's Secret bags and other places to make a table cover for our side table (we don't have a dinner table. We're college students after all lol.) I found some pillar candles in the cabinet and wrapped them with the ribbon handles from the Victoria's Secret bags. I placed them on glass coasters inside a bamboo tray that I lined with more tissue paper. I put the large conch shell we got from the Bahamas in the middle of the two candles. We'll use the other two coasters for our drinks tonight!

My Frugal Valentine Day
I made a menu similar to those in restuarants with tonight's specials in them. I will present this to hubby when he gets home tonight.This took less than 30 minutes to make and looks great.

I used what I had on hand:
  • a hanging file folder (hangers removed),
  • 2 sheets of 12x12 scrapbook paper,
  • glue and embellishments (stickers, ribbon, etc.)
I made the inside with a place for interchangeable specials using a 6x8 piece of paper and photo corners. I can remove the paper anytime, leaving just the photo corners for the next use. I plan on using my menu often!

And lastly, since we're not doing store bought gifts this year (just having taken the cruise a few weeks ago) I have a card for him. It was free from TinyPrints and has a few pictures of us from our cruise inside. He'll think I spent something on it so I think it'll be a nice surprise!
