UPDATED: Open Faced Enchiladas

When we were first starting out, our food money was super tight so we often ate hamburger helper only to find many not so tasty (or original) varieties. We did find one that we liked very well and with a few enhancements from me, we had a great dish. Using the Hamburger Helper Cheesy Enchilada Mix you'll have a tasty and budget friendly meal. I'm actually making this for dinner tonight so I will definitely upload a photo later.
Ingredients:
1 box Cheesy Enchilada Hamburger Helper
3/4 to 1 lb ground beef
1 pk tortillas (for frying)
bell peppers
oil
  1. Prepare enchilada mix as directed on box.
  2. Small dice bell peppers and add in last 5 mintues of cooking time.
  3. Heat frying oil over medium to med high heat with about 1 inch oil.
  4. Fry each side until golden brown.
  5. Drain on pap3er towels.
  6. To assemble:
    • Place one fried tortilla on the plate
    • scoop enchilada mix onto center of tortilla
    • Top with shredded cheese and sour cream
    Then, have at it! Eat with your fork (making sure to crack the tortilla with every scoop) or with your hands like nachos.
